An international hotel group with over 5000 properties worldwide has a fine dining restaurant opening in one of their Hong Kong 5-star property. A rare opportunity has arisen and they are now inviting a Head Chef as part of their pre-opening taskforce for a fine dining Italian restaurant.
About the Role
Reporting to the Hotel Executive Chef, you are responsible for leading the opening of their new fine dining Italian restaurant, managing the day-to-day operation of the kitchen whilst supervising and developing the back of house brigade. You will ensure the highest standards of food preparation and delivery, as well as an effective communication across all sections of the kitchen. You are responsible for food ordering, inventory control and delivery, and budget management for the kitchen. You will participate in pre-opening event for new restaurant openings, and responsible for menu development and creation ensuring seasonality of ingredients. Manage staff recruitment, scheduling, and training. Most importantly, you will ensure operational and food quality standards comply with health and safety policies and procedures.
The Successful Applicant
The ideal candidate will be a seasoned culinary professional with a minimum of 8 years Chef experience working in a fine dining restaurant environment, with strong knowledge in Italian cuisine is a pre-requisite for this role. You must be creative, with a passion in delivering high quality seasonal food. You must have the ability to influence, lead and communicate clearly with your team, with a track record of leading a team.
